It all started when I was hungry for some chocolate chip cookies. I hadn't had any since I had moved out of my parents' house at the age of 19; but I wanted those cookies like my mom made. I found an amazing recipe (right on the back of the chocolate chip bag!). Baking cookies became my hobby; I played with different flavors, ingredients and recipes. Pretty soon people knew me as the 'Guy Who Made Cookies All the Time.' Seriously!

After a while I decided to try and sell them in brown paper bags - I called them "Stookies Cookies." I made them in my tiny Chicago apartment kitchen. It wasn't long before I realized that I should have some kind of license. So, I figured if I completed a culinary program I would be able to get the licensing I needed to sell my cookies. I registered for classes at the Cooking and Hospitality Institute of Chicago (CHIC). As I worked my way through the program I realized how open the world of pastries is; so upon graduation I set out to learn more. The cookies would have to wait.

I found a job at the reputable Bittersweet pastry shop in Chicago. I would stay there for three years working everything from rolling and cutting tartlet shells, to designing, baking and building wedding cakes. I learned the ins and outs of the bakery world and developed an understanding and respect for high quality ingredients and proper techniques.

Upon leaving Bittersweet I moved to Ann Arbor, Michigan where I had a small stint as a pastry chef at the famous Moveable Feast near downtown Ann Arbor. At the beginning of 2004 I left Moveable Feast to begin working at Decadent Delight. I purchased the company in November 2005 and expanded its menu from just offering desserts to including wedding cakes and other fine pastries.

Today I still cultivate that same high standard of quality and taste in everything that is made in our shop. I look forward every day to creating and designing the ultimate dessert experience. From miniature Chocolate Decadence Squares to 5 tier wedding cakes, it's a dream come true... and Stookies Cookies are still around too!
